Preheat oven to 425F, line a baking sheet with parchment paper.
Using a mixer with a dough hook, mix the pretzel ingredients together until combined into a ball.
Sprinkle flour on your work surface, and place the ball of dough on the counter. Work it a little and split it into 4 sections.
Roll each section with your hands back and forth until they become long rolls of dough.
Slice the dough into roughly 1" - 1 1/2" sections. I was able to get 8-9 pretzel bites out of each section.
Dip each pretzel bite into the baking soda and water bath then place on the lined baking sheet.
Bake in the oven for 10 minutes, and let cool on a rack.
Brush the top of each pretzel bite with melted butter and sprinkle with a pinch of flakey sea salt.
Notes
