The Best Cajun Nachos (Crowd Favorite)

Cajun Nachos Ingredients
- Tortilla chips. My favorite is the Que Pasa brand, use your favorite variety.
- Red pepper. A sweet bell pepper brings color and flavor to this dish.
- Green pepper.
- Jalapeno. This is optional, if you don’t want spice, feel free to leave it out.
- Cajun seasoning/spice. This brings the unique flavor that makes the nachos.
- Corn. Fresh or frozen corn, it doesn’t matter. I used frozen corn, but let it sit in some water for a few minutes before I added it to the sheet pan.
- Green onion. This is for topping and adds a little extra flavor, this can be optional.
- Andouille sausage.
- Cooked chicken breast. You’ll only need one large one.
- Monterey jack cheese with jalapenos. This cheese has so much flavor! I love using the variety with diced jalapenos in it for a little extra spice.
Serve it With
- Your favorite salsa or pico de gallo (whatever heat level you prefer – I like medium).
- Spicy cheese sauce
- Louisiana hot sauce
- Guacamole
Variations
- Chicken. You can swap it for blackened shrimp, cooked crawfish, or leave it out altogether.
- Andouille sausage. If you can’t find andouille sausage you can substitute it with a regular smoked garlic sausage from the store or kick it up a notch with chorizo.
- Monterey jack cheese. Whatever cheese you have in your fridge. Mozzarella works, although it’s a little less flavorful.
Nachos Tip – Layers
When you make these cajun chicken nachos, remember to make them in layers.
When you make any nacho recipe in layers, each serving gets an equal amount of toppings. There is nothing worse when you’re eating nachos than having all the cheese on top and then sad lonely nachos on the bottom.
I like to start with a cooking sheet lined with parchment paper (for easy cleanup). Then I add my chips, and the protein (in this case, chicken and andouille sausage).
Next up would be the red and green bell peppers.
Then I added the pepper jack cheese, sprinkled over the cajun seasoning, topped with some jalapenos, and corn.
Bake in in the oven at 350F for about 5 minutes or until the cheese is melted and bubbly.

Cajun Chicken Nachos
Ingredients
- 6-8 cups of tortilla chips
- 1 cooked chicken breast shredded
- 1 andouille sausage sliced
- 1 tablespoon cajun seasoning/spice
- 1 red pepper diced
- 1 green pepper diced
- 1 jalapeno sliced
- 1/3 cup corn
- 2 cups Monterey jack with jalapenos shredded
- 1 green onion diced
Instructions
- Preheat oven to 350F and line a sheet pan with parchment paper.
- Add half the tortilla chips to the pan, then top with half the shredded chicken, half the sausage, half the cajun seasoning, half the peppers, and half the shredded cheese.
- Top with the rest of the tortilla chips, the rest of the above ingredients, the sliced jalapeno, and corn.
- Bake for 5 minutes, or until cheese is melted and done. Top with diced green onions.
