This pub style beer dip is a hit.
I was inspired by Blake Shelton’s bar, Ol’ Red in Nashville. I was recreating their Redneck Nachos and needed to make a beer cheese sauce using Velveeta (I remember seeing Velveeta listed on their ingredients).

Ingredients Needed
Here’s what you need for the hot beer cheese dip.
- Velveeta. I cut up Velveeta in smaller chunks before I added this to the saucepan, it helps it melt more evenly. I used the regular cheddar cheese variety.
- Beer. Use whatever brand you like, I used Coors. However, you can use your favorite. It will adjust the flavor a bit but explore this recipe with a lager, pale ales, or a light beer.
- Rotel. Rotel is a mix of tomatoes, spices, and green chiles.
- Garlic. Everything is better with garlic.
- Dijon mustard. Dijon brings an extra “oomph” to everything it’s added to. You don’t need much.
- Cornstarch or arrowroot powder. This will help thicken the dip.
- Optional Cilantro for garnish.
How to Thicken Beer Cheese Dip
If you have a heavy hand while pouring the beer and find that the cheese dip is too runny, mix together 1 tablespoon of cornstarch or arrowroot powder and 2 tablespoons of water. Then add it to the dip and stir.
That’s what I had to do and it turned out perfect.

Storage
Beer cheese will keep in the fridge for 3-4 days. I wouldn’t push it past four days.
Make sure you wrap it up with plastic wrap or beeswax wrap.
How to Make Velveeta Beer Cheese Dip
This easy beer cheese dip recipe is made with Velveeta and your favorite beer. It has a rich, creamy flavor! Add your favorite veggies and breadsticks or pretzels for a delicious party dip.
When you’re melting the Velveeta, remember that every stove is different. Cook at a low or medium-low heat, slow and steady.
There is no added salt in the recipe as there is enough in the Velveeta, but you can taste and adjust the seasonings to your liking.
Tip: Use a whisk to stir the dip mixture. It does a better job than a spatula (I switched halfway through the recipe and the whisk helped prevent burning).

Velveeta Beer Cheese Dip
Ingredients
- 1 package Velveeta Cheese 450g (16oz)
- 2 cloves Garlic minced
- 1 cup beer
- 1 can Rotel 284mls
- 1/2 tsp dijon mustard
- 1 tbsp arrowroot powder + 2 tbsps water
- Cilantro for garnish
Instructions
- Heat a medium sauce pan (I used a cast iron skillet) over low heat. Let this heat up for 1-2 minutes. While this is heating, cut the Velveeta cheese into cubes.
- Add the Velveeta to the pan and stir constantly to prevent the cheese from burning.
- Once the cheese has melted a little over halfway, add the minced garlic and stir until the cheese is smooth.
- Add the beer, Rotel, and mustard. Let it bubble for about 5-7 minutes. Keep stirring.
- If the sauce is too runny, mix 1 tablespoon of cornstarch or arrowroot powder with 2 tablespoons of water in a separate bowl. Then add to the dip. It will thicken right up.
- Top with cilantro for garnish. Serve with chips, pretzels, and veggies.
